So.... we have been trying to use up EVERYTHING we have on hand. I happened to have shrimp on hand just sitting in the freezer waiting for me to stomach making it again for Graham. The other night we were going through the pantry and taking stock of what was in it, and what did I find? I found coconut, which is what lead to me making coconut shrimp. Those of you that know me know I dislike all things seafood.... except tune...... and Graham hates everything seafood except shrimp. Anyway without further adieu here is how I made it:
